Weigh in day... one day early :)

Well, I was supposed to weigh in tommorrow but my wonderful children came running to me saying that our new scale was broke.. when infact the batteries were dead! LOL SO I figured that I might as well get it over with.

I was rather diappointed though as I usually weigh only once a month but last week I jumped on the scale and I weighed 428.6 at about 3 pm in the afternoon. I figured that my actual weight was around 425 becuase I had been drinking a lot of fluids that day. So I was hoping for a great showing on the scale..yet I was disappointed when the scale said, "426.8 pounds " I really thought that I might hit 423 or so.. Anyway11.2 pounds lost is nothing to cry about! I look forward to next months weigh in as I creep toward breaking into the 300's :)

On a side note, I have lost over 100 lbs since starting this life style change in January!!!!

Wow! Things are really hectic around here I am remodeling the kitchen and I have about 3 weeks to finish.. I might not be posting many pictures.. I will try to keep posting my menus and of course read your all blogs :) Should be back to normal in three weeks.

Oooolala sooo goood :)




Homemade Ice cream (lower carb)
6 cups heavy fat milk
2 cup heavy cream
2.5 cups Splenda
1 cup Lan Guo
1 8 oz package of cream cheese softened
3 eggs
3/4 cup Davinci Sugarless Carmel Flavor
1 Tablespoon Vanilla
3 ozs of crushed almonds
2 ozs or more of sugarless chocolate cut into small bits

In a large sauce pan mix all the ingredients together except the almonds, chocolate and eggs.

Start on low heat and stirring constantly raise the heat to medium when the mixture becomes warm to your touch. Continue stirring every 30 seconds. In a separate bowl mix the eggs and add one cup of the mixture to the mixed eggs stirring constantly. After about a minute add another cup of the hot mixture to the eggs and while stirring..repeat this step to be safe but the eggs should be tempered now so add the mixture that is in the egg bowl to the sauce pan while stirring. Cook about 5 minutes but stop before it starts to get too thick put it in the fridge for several hours to cool down. When its col pour it int your favorite ice cream maker and let it rip.

PS To lower the carbs you might want to use liquid splenda and all heavy cream and or coconut milk for half the mixture.

It is hot I needed something easy. Stir fries hit the spot... quick, simple and Yum. Then I brainstromed a new ice cream recipe and made it this evening with my children. Wow! Is all I can say. I still need to finish up my splenda. So i used it, and when I have used up all the granulated Splenda I will use the liquid Splenda up and then I will be done. Then you will be seeing Lan Guo as my prefered sweetener!!
Anyway, if you need a boost this summer or a refershing treat..make the ice cream you will be happy you did!

Lunch: McD's Low Carb Special ( 1/2 pounder with cheese hold every thing and a side salad with Stevia sweetened dressing
Dinner: Spicy shirataki stirfry and sirloin pork steak ( the picture does not look appetizing but the taste was wonderful! especially since it was concocted by my 12 year old daughter..picture too!! I taught her how to cook now I need to give her some photography lessons hehehe)

Yay, I just found out that she took 12 pictures so I replaced the originally posted picture with this one.

No pictures today. I went to the city with my kids to take them to the new HArry Potter movie. The safest place to eat was McD's.. so that is what I did :)

Power of three..Vitamins


Well, it is time to ask some advice. You have seen my daily intake of nutrients. I wonder where I am lacking. Here are the current supplements that I am taking. The brands will change shortly after I get a care package from home. Is this enough do you think? I have thought about adding l-carnitine and flax seeds and or coconut oil more in my diet. Any recommendations would be helpful! PS The only other supplement that I take now on occasion is Psyllium Husks.

Dinner: East meets far East Curried Stir Fry
Hehe two pictures to make up for yesterday! I was craving curry rice. See here in Japan, in the summer time it is kind of our tradition to heat super spicy curry rice. I tried to find some cauliflower to male faux rice but could not find any so I came up with a curry flavor jacked stir fry. How was it you ask?? Yummo! Definitely hit the spot!
oops after I wrote this I remembered I ate a snack of mixed nuts before dinner and after dinner a sugar free jello...

I don't know what the deal was today..but Iwas hungry and it was hot! The sugar free jello really hit the spot. I definately ate too many nuts.. Well, must do better tmrw! Sorry I forgot to take pictures ;(......

Tandoori Chicken

2 pounds chicken, cut into pieces
1 teaspoon Kosher salt
1 lemon, juiced
1 1/4 cups plain yogurt
1/2 onion, finely chopped
2 cloves of garlic, minced
1 teaspoon grated fresh ginger root
2 teaspoons garam masala
1 teaspoon cayenne pepper
2 teaspoons finely chopped cilantro
1 lemon, cut into wedges
1 tablespoon paprika
1/4 teaspoon ground cinnamon
1/4 teaspoon ground turmeric

DIRECTIONS
1. Remove skin from chicken pieces, and cut slits into them lengthwise. Place in a zip loc bag pour the juice and add the salt into the bag and massage int chicken. Let rest in the fridge for 20 minutes.
2. In a bowl, combine the rest of the ingredients and mix thoroughly. Add to the zip loc bag and massage into the chicken. KEY Place Marinated Chicken in fridge for at least 24 hours. If your going to rush it don't make it! :)
3. Cook on a grill until juices run clear .. about 6 minutes each side. Garnish with cilantro and lemon wedges.

LC Pepperocino


Yesterday, one of my student's parents brought by a new LC dish for me to try... ( I told her all about my diet because she was interested in how I was losing so much weight ) I tried it and went that night to the store and bought all they had! Here is the review!


Product Name: Konyaku Pepperocino Pasta
Maker: Nakagawa Shokuhin
What is it: Peppercino is usally a high carb pasta dish that is simple to make. The sauce consists of garlic, salt, hot peppers and EVO. The pasta is dropped into that sauce and mixed thoroughly. Some people add some fresh grated Parmesan cheese or fresh green herbs to garnish. Nakagawa has replaced the pasta with Konyaku which is technically less refined Shirataki Noodles to create a low carb pasta.
Taste: WOW! I was always wondering if I couldn't make a good pepperocino out of shirataki noodles and this answered it for me! Very authentic Pepperocino taste. Passed the kid test, too!
Volume: Well, for everything it packs in flavor it comes up short in volume. It would take two packs to make a stand alone meal. But the thing that is neat is that there is just enough volume that if you added some fresh veggies and meat.. that you have a perfect LC meal. (check out my dinner pics)
Price: Regular price is about $1.50 a pack. ( I found mine on sale for 100 yen or about $1.00)
Verdict: Would I buy again? Absolutely! This fits the bill as a great side for a nice piece of protein or as a base for a more elaborate dish! In fact, I went to the store and bought the rest of stock they had as the shelf life is long!
oops forgot the info... 60 calories and 3.8 grams of carbs :)

I had three LC wraps left so I made of some spicy pork and cut up some veggies and added two kinds of shredded cheese to make a wonderful LC lunch.

Monthly Weigh in

Well, the good news is I have dropped another 10lbs :) The better news is that I can walk 2 miles without dying :) The exercise train is rolling but I need to amp it up.. I hoping to make July a great month to remember :)

Snack: Home made coconut cream custard that was soooooo Yummo! I took pictures but they did not do it justice so I will not post ..next I make the custard I will stage it better to get a better picture :)

Holy Smoly stop the press those burgers were the best I have had while doing low carb!
The butter sauteed onions, shimeji mushrooms smothering the mozzarella, Gouda cheese and pastrami topped burgers were intoxicating. The pickle ships refreshed the palette between bites of the burger creating perfect harmony between the two dishes. Need I say more?? They were great! Thanks for the inspiring picture Harry!!


Demon Socks


As a child I hated wearing socks for some strange reason unknown to me at my current stage in evolution. As I grew into an adult (some might scoff at me being labeled as an adult :) I grew to love socks. White socks, crew socks, argyle socks, wool socks, walking socks, socks with battery operated heaters and the list goes on and on and......
However, about three years ago, I started to hate socks! I hurt my back and I was no longer limber enough to reach down and put the buggers on. When my back healed I tried to put on my own socks... but I couldn't reach around my belly nor was I limber enough to reach behind my back. So for the last three years I have had my children put on my socks or I went with out...
During those years, my life was centered on planning around who could be there and when to put on my socks. This was akin to being crippled for being too big and I knew that I must do something about it. Yet, I let my self go to the point of no return. I was too busy worrying about work and who could help me put on my socks next. My diet was in shambles. One of my biggest problems was not eating 3 squares a day, starting in the morning. The second biggest thing is if I got a craving for anything I would make it!! Well, what happens when...you have a couple dozen cookies piping hot from the oven and a couple litres of milk and an empty stomach? .... I will let your imagination wander.

So you must realize the horror I felt yesterday morning as I realized that my daughter left without putting on my socks. What should I do?? I was borderline panicking..then it hit me.. "You are not the same man you were in January! Put on your socks!" said a little birdie in my head. So I grabbed a pair of long white tube socks and I put them on!
I cried!

The tormentor is gone. I am no longer bound to the "Demon sock". I can't put into words the joy I felt in my heart as I effortlessly put on my socks again this morning! You know socks are cool! My supply of socks is kinda bland. I can't wait to buy some more "cool" socks.

What ever demons you have in your life, don't let them control you and you will find inner peace!
