Who do you believe??

You know some of the things that I find that are very annoying are the discrepancies in the carb counting charts.. for example one of my favorites "Shiitake" mushroom.

In my Japanese official nutrition catalogue it has the above mushroom tallying in at .5 carbs with .4 carbs per mushroom but the Atkins carb calculator has it at a whopping 2.2 carbs per shroom.

Another example is the all powerful and breakfast favorite "eggs". In Japan, a whole egg is counted at .2 grams where as we all know that in the Atkins plan it is counted as .6 grams.

hmmm..

I talked to the nutritionist at our school about the discrepancies and she said it was to due to the type of feed that the chickens eat that lay the eggs. Hmm..so I wonder are Japanese chickens on a low carb diet?? As their lower stats on the all important carb line shine when compared to their American counterparts?!

I wonder can someone give me a better explanation? Cuz this enquiring low carber really wants to know. o.O and btw.. most of the nutrition stats are the same or really close to each other when comparing.

It really makes you wonder what they feed our chickens. I mean really, is it that organic stuff, or just regular Purina chick feed ? I try to get some eggs from local neighbors who raise chickens. Personally, I just think an egg is an egg. But then again, they come in different sizes, colors, etc. Some of the most beautiful colors I've ever seen too.

What kinds of colors do you get on fresh hen eggs in Japan ? LOL.

hmmm depends on the chicken but they range from a white to dark redish brown and every shade in between.. my uncle in law raises chickens that lay spotted eggs.. another local delicacy.. personally I cant tell the diference.

I've never been one for counting carbs or calories. I just try to select LC safe foods and eat natural and/or organic whenever it's practical.

If I get too bogged down in numbers ... it tends to make me feel overwhelmed. It also makes my diet seem too technical.

hehe I long for the day when i can do exactly what you say.. but the reason it is annoying is the difference essentially its a carb free food in Japan and in America its loaded.. ( the mushrooms) as I create more recipies for people to use I dont want to give them misinformation about carb count..

Infact check out my new recipie using the mushrooms in question :)

I understand your frustration with the numbers game. I have a carb count book & a calorie count book, I use calorieking.com, and I read nutrition labels. I am sort of a number person and I find it annoying when things don't jive. I once took a nutrition class and pointed out my frustration. The nutritionist suggested doing averages to put my calculator of a brain at ease. Perhaps if you are a numbers person you could do the same.
