September 30th, 2009


Wow, Fall is already here...but in Japan that is a good thing :) See there is a Japanese quisine that is perfect for those that are managing their carbs! The name of this culinary delight is Oden. Today, I dropped by a local convenience store and picked out some of my favorites. Pictured above are 2 eggs, Konyaku, 2 pieces of daikon and a sausage. Oops, I forgot to mention the hot mustard and the LC broth :).

Breakfast: Protein Shake
Lunch: Oden
Dinner: Green salad and a plain hamburger steak.

Steaming thinly sliced pork strips overa mountain of veggies

Low carb version with a lemon and soy sauce based vinegarette


For the kids..after the meat was finished I mixed in some chinese noodles and added some seasoning..
Simple fresh ingredients, one pot and 5 smiles :)
The kids loved this dinner, I loved it, too!

Breakfast: Strawberry protein shake
Lunch: 2 oz Almonds
Dinner: Steamed PorkStrips and veggies(Cabbage, Bok Choy, Onions, Carrots and Mushrooms)
I didn't eat the carrots or the noodles..

Dinner: will be at McD's 1/2 pound burger and side salad and water I am thinking no to Coke Zero.

I am using Dr. Walker brand low carb shakes that I bought when I first began this life style change. The shakes taste okay..but to be honest I enjoy real food.. I am only making the shakes per directions without fritzing them up.. and at 1 net carb per serving.. I have really cut back on my carbs. I will bust this plateau!!

Update, the multivitamin was the culprit of my stomach troubles. I now cut the vitamin in half and eat half a vitamin four times a day. So far so good.

No pictures today! But on the brightside today is the start of a five day weekend!! Another little tid bit.. In February I will be returning to the states for a visit..via Hawaii :D at which time I plan on visiting my first Whole Foods store!!! If there is anything that is a must try..do let me know:) I am going to try the Zevita drink, and hopefully some of the delicous looking deli items that my amigo Harry eats regularly!!

Breakfast: 3 egg and veggie scramble and 2 pork sirloin chops

Yes, I feel bloated so I will be adding several shakes to my eating plan for the forseeable future... see after the refeeding... my digestive system was thrown for a loop.. and I paid for it for 2 weeks.. now it has come full circle and I am having the opposite problem if you catch my drift.. ;( So, I am going to try to do some cleansing.. to get myself back on track!

The reason for the sudden change is complex.. I just went through a divorce and now I am single Dad. I just got on the scale, breaking my own rule of weighing once a month, and found out that I have not lost a single pound since the last weigh in. The culprit of this stall could be many things, lack of exercising, a plateau, not enough water, too much yogurt etc. So I plan on blasting through this temporary setback and getting mysyself on the downward trendline again!

O.o I plan on keeping track of my water consumption from now on..

Lunch: 1/2 lb burger steak and a small green salad
snack: piece of LC cake & 2 ozs of nuts
Dinner: 1 pork sirloin and sauteed bok choy, onions and kraut
Dessert: Lemon Mousse

LC Lemon Custard Cake

First, I must apologize for the poor pics..the lighting was not the best... I got the inspiration for this cake from Yahoo. The recipe was sponsored by Splenda butI changed it almost entirely.. that is the ingredients are very diferent than the original.. Overall taste I am happy with.. but I wish the cake was less dense and lighter rather than pound cake like..I will continue to tinker to perfect this as I think it will become one of my favorite healthy desserts!!!!

Ingredients for Cake
1 cup of coconut flour
1 cup of your favorite sweetener ( I used Lan Guo)
1 T baking powder
1/2 tsp salt
1/2 coconut oil
10 eggs beaten
1 cup coconut milk
1 tsp lemon rind
1/4 cup freshly squeezed Meyer lemon juice or 1/2 tsp lemon extract

Cake Directions
1) Preheat oven to 350 degrees
2) Combine coconut flour, baking powder, and salt in a large mixing bowl.
3) stir in coconut milk, eggs, lemon juice or extract, and lemon rind on low speed.
4) pour evenly into 2 8" round baking pans
5) bake for 25 -30 minutes cool cakes in pans for 10 minutes, then move to wire racks to cool completely


Ingredients for Custard
6eggs
1 large can (16 oz) of coconut milk
2 T of lemon rind
1/2 cup of Bob's Sugarless Margarita Mix
Juice of 4 lemons
2 T of butter
1 cup of sweetener
1/4 tsp xanthum gum

1) mix the wet ingredients and xanthum together pour into a double boiler and bring the mixture to an almost boil...LOL
2) beat the eggs in a seperate bowl and add the hot liquid mixture to the eggs while stiring constantly to temper the eggs.. repeat several times then add the egg mixture back to the double boiler and and stir cosntantly until you get you desired consistency...will set up more as it cools..

Ingredients for Frosting
1 1/2 cup whipping cream
2 T sweetener
1 tsp lemon rind
1/4 tsp lemon extract

1) mix all the ingredients together and whip to very stiff peaks

To put it all together: spread teh lemon custard evenly between the cake layers. Cover the layers in whip cream and Enjoy!!

* I just ate another piece of this cake after letting it sit in the fridge for 24 hours.. WOW! 24 hours changed the texture to a cheese cake consistency..I don't know which is better before or after 24 hours..try it and tell me which way is better :)

I am adding yogurt into my daily diet in controlled amounts to help my digestive system for a week or so and then drop down to three times a week after that. See I had a refeed day during my remodeling period and I paid for it for the next 10 days. I don't know if I want to try a refeed day again..LOL I am hoping that adding the yogurt will help keep my stomach and digestive system healthy.

Lunch:2 oz mixed nuts and 2/3 cup of yogurt with sugarless sweetener
Dinner: We went out for dinner tonight and had Japanese Yakiniku (Japansese style barbeque where you cook the meat at your table) the most surprising thing... was the beef sashimi... I usually don't like raw beef... but..WOW! What a surprise! My children also loved it! Sorry, no pictures.. I forgot my camera.

Monthly Weigh in

Well, this morning it was time to get on the dreaded scale and....*drum roll* the scale said, "413.8 lbs." Which is a nice 13.8 pound loss from my last weigh in. Onward and downward!!
