Egg plant Parmesan

4 to 6 thinly sliced eggplants
1/4 Cup coconut oil
Salt and Pepper

2 cups of your favorite LC Tomato Sauce
2 cups Mozzrella Cheese
1 cup Parmesan Cheese
1 lb of your favorite Italian Sauced  ( browned and grease drained)

Step one
Put all the eggplant slices in  a bag add some salt, pepper and cocnut flour and seal the bag.
Shake the bag untill all the slice of egg plant are covered evenly.
Deep fry or pan fry on olive oil until golden brown, place on a wire rack to cool.

Step two
Place the fried eggplant strips in a 9x9 or so deep baking casserole dish or cake pan so the entire pan is covered, one high..only please :) then evenly cover the eggplant with 1/4 of the tomato sauce, sprinkle 1/3 of the browned sauage on top of the sauce and then cover the sausage with cheese like you would a pizza.

repeat two times

Step Three
Cover the layers once more in the fried eggplant strips and pour all the remaining sauce over the strips,  so it is evenly spread.. and sprinkle the remaining cheese over the top of the final layer.

Bake @ 372 F for 45minutes

Variations
I baked mine for an hour and it was a little too long..
I made this for the first time (my original recipe) and I feel  that it can be taken to another level if... maybe dredging the egg plant strips in a mixture of parmesan cheese, coconut flour and pork rinds

Also adding some pepperoni or rendered liguisa or other sausage between the layers would enhance the culinary experience of this dish..

Taste.. well let me say this my 4 children dispise egg plant but the devoured this dish..

??Questions??

This morning started very well.. I was up early full of energy.. made a beautiful 3 egg omelete loaded with cheese, mushrooms, asparagus and bacon. Then I drank my multivitamin... about 12 minutes later my stomach started to ache and my stomach decided to empty it self.. so disappointing ;( but this is starting to be a trend.. I recieved some new vitamins from America( Costco Brand) and one in four times my stomach starts to ache after taking these vitamins. (I usually take a multivitamin, a fish oil and glucosomine as part of my supplement stragedy.) I always take these with food..

Anyone have a clue to why this happens??

I have always had a week stomach. But since going LC my stomach generally has been much better. I really hope this resolves it self...anyone with some insight ..please share!

Breakfast: none

Brunch: Waffle, egg, bacon and cheese sandwich.
Dinner: Pork and Kraut saute made by my wonderful daughter (13) :)
Snack: Chocolate cheese cake (LC)

I had this huge desire to eat a McGriddle from McDonald's. But instead of giving in... I made something better.. a "Waffler" which me and the kids ate this afternoon for brunch. How was it?? Yummo! I got the waffle recipe from a LC forum so it is not an original but I changed it a bit and it is  good :)

LC Waffles
1/2 cup coconut flour ( recipe calls for 1/4 but it was tooo thin so I made it 1/2 to excellent results!!)
6 eggs
4 T butter
1/2 tsp salt
1 tsp baking powder
1/2 cup of your favorite Davinci flavored syrup ( I used maple syrup flavor)

Beat the eggs til frothy mix in syrup and melted butter lastly add in dry ingredients mix well and let stand 5 minutes. Cook per your waffle iron directions. Sandwich 2 eggs some sliced cheese and bacon between two waffles and voila you have your self a waffler! My kids loved them..definately does not taste LC!!

Breakfast: 3 eggs with a little homemade salsa
Lunch: beef burger steak and homemade coleslaw
Dinner: Broiled Spicy pork tenderloins, simple cucumber pickles and fire cabbage
Snack: Homemade chocolate cheesecake bar

Well, things went well today! But..you won't be seeing me eat lettuce for a while..*cries* The price of lettuce has spiked recently here in Japan and a head of lettuce can not be found for less than $3.00. However, cabbage is realatively cheap at about $1.50 and fresh spinach seems to be reasonable.

Last, night I came up with an idea for a cabbage dish that I call, "Fire Cabbage" which is very tasty and easy to make! Just cut some cabbage and saute in some EVO, butter and garlic. Making sure not to brown the caggage and then add a healty dose of cayenne pepper and hot sauce and voila you have a wonderful side that goes well with a good quality protein!!  Do try it!

I am back :)







Well, thanks for those that were worried about me! As I said in some earlier posts that I would be taking some time off to remodel my kitchen and now I can happily say that I am finished :) I will start my food blog on Monday, please tell me what you think about my new kitchen ..all the work was done by me!
