Low Carb Baking?? Not for me...

You know on a low carb diet you can really eat well. Foods with flavor, character and panazz..

I love to bake. So for my sons birthday I tried my hand at doing it low carb. My first endeavor.. Key Lime Cheese cake.. which could be described best by my son.."Yuck!" was a major culinary disappointment. Lack of flavor, strange after taste etc.

So I try something new.. LC brownies.. I even loaded them up with Sugar Free Reese's peanut butter cups.. again major disappointment.. so my delving into LC baking has come to an end.

Back to things that can be successful.. LC Carbonara anyone that is on the menu tonight and I will be posting the recipe tomorrow.

The Good the baaaad and optimistic..

All people that carry more weight than they should tend to be in denial about there actual weight until they actually step on a scale. Even then many of us balk at what we read or hear from the noncommittal foe.. as was the case when I stepped on my fresh air mail delivered scale from America.

485.8 lbs is what that white box showed me when I dared put my flesh on the devil box.

You have to be kidding me.. I thought to my self more than 100 lbs off my original estimate..

I think I would rather be looked down upon by the fitness Nazi rather than face the white box again..

Yet, if I let my self succumb to depression or fall off the wagon now.. I will only find myself sinking deeper and deeper into an abyss of sorrow, self pity, doubt and remorse.

So, I move on. I start posting my weight on a weekly basis to keep track of all the forays with the fiend until I can convert him to be my ally. At which time I will immediately disperse of this foul object in lieu of a much more subdued and complimenting piece of weighing technology, to fit my new form.

I hope all of you can enjoy the fight that is coming :)
